If you rely only on the yeast that is present on the fruit, you are not going to get a regular conversion, that is why you have to add some more.

After primary fermentation is completed, you can try squeezing more juice out of the grapes. You will find that the juice you get in the second stage is not of as good quality as the juice got in the first crushing stage. There’s a reason behind that: The juice that you got in the first crushing was the free run juice that was devoid of stem and skin of the grapes. Still, you will find great use for this press juice. When the pressing process is completed, there is a secondary fermentation going on it, along with its aging. You can decide how long you want your wine to be fermented.

At the end of your wine making efforts, you will have to bottle your wine. The wine is poured into bottles and at times you may wish to add sulfites in order to help end fermentation as well as to preserve the wine. Seal the bottle with an appropriate cork when all this has been completed.
